Green Mangoes and A Green Mango Smoothie
Many homes in the Florida Keys have mango trees planted as part of their landscape. |

Mangoes can be difficult to prepare; an easy way I think, is to score the fruit within the skin. |
Spending time yard selling with Willie last Saturday, we stopped at a home that had two different varieties of mangoes as part of the landscape. The trees were heavy with fruit that was not yet ripe. I really wanted a mango after seeing all those hanging from the trees, so off to the store we went.
( As an aside, it's not a good idea to visit the grocery store when all you've had to eat for 7 days is blended pulp; but Willie and I went in and out, visiting only the produce area. Aren't you proud of us?)
Once home, I made a green drink smoothie from the mangoes I purchased at the store. I thought it would be a healthy recipe to share since mangoes are full of Vitamins A and C as well as potassium and this drink provides lots of fiber too.
2 cups of Lakewood Organic Smart Healthy Pomegranate with Cranberry Juice
1 cup peeled and chopped mango
1/8 cup of soaked almonds
4 cups organic baby spinach leaves
1 cup ice cubes
Place items in high speed blender in order given and blend as for smoothie.
It was really good but I'm getting tired of liquids.
