It is up to us to be wise and store the food we need to feed us during both the fat and lean years. I try to buy organic, local and sustainable food in bulk. As you can see, not everything in the cabinet is organic but the majority is. The transition to an organic, whole food diet is a phased approach. Slow adjustments help keep the feeling of deprivation away. I feel that it is important to store whole, natural foods that can be prepared in a variety of nutritious ways. Learning to cook the stores of food before you are in an emergency situation will keep family members from refusing to eat anything unfamiliar.
