Rainbow Chard and Onion Saute

A beautiful bunch of Rainbow Chard was included in my organic produce box this week. Chard is a type of beet that has been bred to grow thick stalks and large juicy leaves. Rainbow Chard is actually a mix of Swiss chard, red chard, and golden chard in one bunch. It has the mineral taste of Swiss chard, the more beet like earthy sweetness of red chard, and the mild nutty flavor of golden chard. Chard is considered one of the most nutritious vegetables.
It can be eaten raw, steamed, or sauteed. I decided to saute it with the garlic and onion, also included in the produce box.

Roughly chop veggies. |
Remove the Chard leaves from the stems and then chop the stems, onion, and garlic. Heat one tablespoon of Extra Virgin Olive Oil in a large cast iron frying pan and add the above ingredients. Saute until tender and then add the chopped Chard leaves. Season with salt, cayenne pepper, and nutmeg to taste.

Just before serving add two tablespoons of balsamic vinegar.
